Loin Center

Top Loin

Crown 6 to 10 325o F 165o F 170o F (well) 20 - 25
Tenderloin 1/2 to 1 425o F 155o F 160o F (medium) 27 - 29
Spareribs - 325o F - - 1-1/2 - 1-3/4 hours
Note: Smaller roasts require more minutes per pound than larger roasts. All pork should be cooked to 160o F; however, 170o F is recommended for some cuts for best flavor.
